2 handfuls of your favorite lettuce (I like spinach & baby spring mix)
1 can mandarin oranges (11 oz.)
¼ cup sunflower seeds
DRESSING
½ cup olive oil
½ cup white vinegar
1 teaspoon dried parsley
1 Tablespoon orange juice
Instructions
Prepare the salad dressing first by mixing olive oil, white vinegar, dried parsley, and orange juice then refrigerate until salad is ready to be dressed.
Select a large salad bowl and place your lettuce inside.
Place a saute pan over Medium heat with 1 Tablespoon of olive oil in it.
While olive oil is heating up, use a fork to mix the tuna with the egg and dried dill.
When the olive oil is hot, press the tuna mixture into the pan into a thin layer and cook for 5 minutes.
Carefully flip the tuna to the other side and cook for another 5 minutes. The tuna may crumble while flipping, but that's ok as long as the egg in the tuna is thoroughly cooked.
Remove the tuna from the heat, and place on top of your lettuce.
Add the mandarin oranges, salad dressing and sprinkle with sunflower seeds.
