🍅Italian-Style Fish & Pasta on Spinach Recipe from Sams Club


I made Italian-Style Fish & Pasta on Spinach recipe for my family and next week you get to taste a similar recipe at your local Sams Club food demo. My recipe features Treasures from the Sea Parmesan Encrusted Tilapia, Hunt’s Tomato Sauce, and Daily Chef Spaghetti that I bought at Sams Club. Want to try a new easy-to-prepare meal?
A great way to get updates on the next Sams Club food demo is by following @SamsClub on Twitter and “Liking” Sams Club on Facebook. Attending a food demo is my favorite way to discover new recipes (thru my tastebuds) and when I taste a recipe I love then I buy the ingredients for it. It’s fun to try new recipes, but it’s reassuring to know that you already like how it tastes!

My recipe layers delicious ingredients to make Italian-Style Fish & Pasta on Spinach with a side of green beans. I know that dinner prep time is critical, so this recipe can be made within the time it takes you to preheat your oven to 425 degrees and bake the Treasures from the Sea Parmesan Encrusted Tilapia for 25 minutes. By keeping the ingredients separate, it’s easier to have delicious leftovers. One of the leftover meals I created was Tilapia on Spinach Salad. I know that sometimes the number of ingredients can make or break a recipe – so I’ve labeled the ingredients which I consider optional (diced tomatoes, parmesan cheese, and green beans).

- 4 Treasures from the Sea Parmesan Encrusted Tilapia filets
- 1 can of Hunt's Tomato Sauce (15 oz.)
- Daily Chef Spaghetti (about half of a 16 oz. package)
- Fresh Spinach (about 2 cups)
- 1 teaspoon Italian Herb Seasoning (oregano, marjoram, savory thyme, basil, rosemary, and sage)
- 1 can of Hunt's Diced Tomatoes (14.5 oz.) optional
- Grated Parmesan Cheese for garnish, optional
- Fresh Green Beans, optional
- Olive oil (a few drops for spaghetti, a few teaspoons for green beans)
- Preheat oven to 425 degrees
- While oven is preheating, setup a pot on the stove for spaghetti, a saute pan for the green beans and spinach, and a saucepan for the tomato sauce.
- Drain the diced tomatoes well and set aside
- Spray a baking dish large enough for four tilapia filets with olive oil (or other non-stick cooking spray
- When oven is at 425 degrees, start baking the tilapia for 15 minutes before rotating
- Add water and a few drops of olive oil to the spaghetti pot and start boiling the water
- After the tilapia have baked for 15 minutes, flip them over and bake another 10 minutes
- Add the spaghetti noodles to the boiling water, they should cook in about 10 minutes so they'll be done when the tilapia is done
- Start sauteing the green beans in olive oil over medium heat for about 5 minutes
- Heat the tomato sauce over medium heat and add Italian Herb Seasoning to it
- When you're happy with the green beans (taste one after it cools off) then you can cook the spinach in the same saute pan (it cooks very quickly, keep moving it around until completely wilted)
- When the tilapia is done cooking your spaghetti should be done too! Remove the tilapia from the oven, and drain the spaghetti in the sink.
- Mix the well-drained diced tomatoes with the cooked spaghetti noodles
- Assemble your dinner by layering spinach, spaghetti noodles with diced tomatoes, and tilapia. Spoon over some tomato sauce. Garnish with grated parmesan cheese if desired. Serve with a side of green beans (because they go so well with any dish that uses tomato sauce). Enjoy!

🐤PEEPS® Strawberry Pistachio Cupcakes Easter Recipe

I made these Strawberry Pistachio Cupcakes as a fun spring treat! I made this treat easy to make by using cake mixes and Wilton decorating supplies. The PEEPS® look like they want to sit in a nest, so I made a nest with some blue and green edible Easter grass. I’d love for you to Pin It to your Easter or Recipe board! Here’s how I made these cupcakes:

- Yellow Cake Mix
- Strawberry Cake Mix
- Pistachio Instant Pudding (3.4 oz)
- Water (as needed for 2 boxes of cake mix)
- Oil (as needed for 2 boxes of cake mix)
- Eggs (as needed for 2 boxes of cake mix)
- Preheat oven to 350 degrees and spray two cupcake pans with no-stick cooking spray with flour.
- Follow cake mix directions to prepare Yellow Cake Mix in one bowl and Strawberry Cake Mix in a second bowl.
- Pour half of the Yellow Cake Mix into a third bowl.
- Beat in the Pistachio Instant Pudding into the third bowl.
- Drop spoonfuls of cake batter into the cupcake pans, alternating between the three flavors.
- Bake for time indicated on the cake mix directions.
- Cool then decorate.
I used Wilton products to help me decorate my Strawberry Pistachio Cupcakes. I used edible Easter grass for the PEEPS® to nest in. I used a Wilton 1M decorating tip to apply green and pink frosting to my cupcakes. It was my first time to use the Wilton Royal Icing Mix and Wilton Icing Colors and I loved that the icing dries hard and it’s easy to get just the right color using the concentrated gel colors.
My photo below shows how I spooned each of the three cake mixes into the cupcake pan to achieve the marbled cupcake above. Next time I won’t fill the cupcake pan as full with batter because my cupcake tops baked right into each other. I didn’t use baking cups in my Wilton cupcake pan because they release so easily after baking it’s just not needed! But I did put my cupcakes in pink and green baking cups after I baked them so I’d get a pretty contrast to the Wilton Cupcake Wraps that look like white picket fences.
