It’s so easy to dress-up these brownies by just adding caramels, sea salt and pecans. I love that Pillsbury™ Purely Simple™ Chocolate Chunk Brownie Mix includes chocolate chunks because I’m always adding chocolate chips or chunks to my brownies. These brownies are so good because their ingredients are so simple. There are no colors, preservatives or artificial flavors in any of the Pillsbury™ Purely Simple™ baking and frosting mixes. I think the simpler ingredients make them taste like made-from-scratch brownies!
There are five different Pillsbury™ Purely Simple™ Baking Mixes: White Cake & Cupcake Mix, Chocolate Cake & Cupcake Mix, Chocolate Chip Cookie Mix, Sugar Cookie Mix and Chocolate Chunk Brownie Mix. There are two different Pillsbury™ Purely Simple™ Frosting Mixes: Buttercream and Chocolate Buttercream. I started with the Pillsbury™ Purely Simple™ Chocolate Chunk Brownie Mix. I always keep at least one box of brownie mix in my pantry because it’s my favorite go-to recipe for sharing dessert with friends. Brownies are fast to make and it’s easy to find add-ins to make them taste unique. I prefer to make my brownies in a cupcake pan so that they come out of the oven ready to serve and no cutting is required. So what are we adding to these brownies?
We are mixing in berry fruit filling (found in the Baking aisle near the pie fillings) into the brownie mix. The berry filling adds richness and moisture to the brownies. We are topping each brownie with sea salt then placing a caramel and pecan halve on top. Add more sea salt on top of the pecans before baking. You can adjust the sea salt to your liking or simply leave it out if you’re not a salted caramel fan.
Here’s my recipe for Salted Caramel Chocolate Chunk Brownies with Berries for you to print or pin:
- 1 box of Pillsbury™ Purely Simple™ Chocolate Chunk Brownie Mix
- ⅓ cup oil
- 3 Tablespoons water
- 1 egg
- ¼ cup berry fruit filling
- coarse sea salt
- 12 unwrapped caramels
- 12 pecan halves
- whipped cream, fresh berries and fresh mint leaves for garnish (optional)
- Preheat oven to 350 degrees.
- Prepare a 12-cupcake pan with no-stick cooking spray with flour.
- Combine ingredients according to package directions.
- Stir in ¼ cup of berry fruit filling to bowl of brownie batter.
- Scoop brownie batter into the 12 cupcake spaces.
- Sprinkle coarse sea salt in the middle of each brownie.
- Add one caramel in the middle of each brownie, pushing it down until it sinks down about half-way into brownie batter.
- Place a pecan half on top of the caramel then sprinkle with coarse sea salt.
- Bake at 350 degrees for 30 minutes.
- Cool brownies on a cooling rack then serve warm. Be sure that the caramel in the center is not too hot! These brownies may need to cool longer than other brownies you've made before.
If anyone in your household has nut allergies, you can easily make this a nut-free recipe by simply leaving the pecans out. You’ll have a gooey caramel center that everyone will love! And it would taste simply divine to top your brownies with the Pillsbury™ Purely Simple™ Chocolate Buttercream Frosting.
Can you taste these brownies? Because there is caramel in the middle, I recommend serving them slightly warm. I reheat mine in the microwave for about 15 seconds to make the caramel gooey again.
The sea salt is the magic ingredient because it helps balance the sweetness of the brownie. Adjust the sea salt to your taste preferences – I like lots of sea salt with my brownies. Be sure to have a glass of milk ready to wash it down with!
Of course these brownies are absolutely delicious when served alone, but they are even more delicious when served with fresh berries, cream and mint leaves as garnish. You can taste a hint of the berry filling mixed into the brownie and the fresh berries help bring that berry flavor out.
